Khajoor ka Sharbat

Khairpur — a district in northern Sindh — is Pakistan’s date-growing capital, producing some of the finest dates on the subcontinent from date palms that have grown along the Indus flood plain since antiquity. The Khajoor ka Sharbat made from Khairpur dates is less a recipe than a tradition: dates are blended with cold milk, sweetened with the dates themselves, perfumed with cardamom, and served as a Ramadan iftar drink or a winter morning drink before the day’s work. The date variety matters — the Aseel and Dri dates of Khairpur are fudgy, intensely sweet and earthy in a way that Medjool cannot replicate, and the drink named for this geography tastes different anywhere else.

INGREDIENTS 

  • 12 large Khairpur dates (or Medjool dates, pitted)
  • 1 litre full-fat milk (chilled)
  • ½ tsp cardamom powder
  • 2 tbsp sugar (optional — taste first, the dates may be sweet enough)
  • ice to serve
  • a pinch of dried rose petals to garnish (optional)

METHOD 

  • Pit the dates completely and check for any stone fragments. Roughly chop.
  • Place the dates in a blender with 200ml of the chilled milk. Blend to a smooth paste, scraping down the sides.
  • Add the remaining milk and the cardamom. Blend again until fully smooth and frothy.
  • Taste: Khairpur dates may need no additional sugar. Add sugar if needed and blend briefly to dissolve.
  • Strain through a medium sieve if you want a completely smooth result, or serve unstrained for a thicker drink with more date texture.
  • Pour over ice in tall glasses. Garnish with dried rose petals if you like.
  • Drink immediately for the freshest result, or refrigerate for up to 6 hours.

UK adaptation: Khairpur dates from South Asian grocery stores and online Pakistani food retailers; failing that, good-quality Medjool dates are an acceptable substitute. Full-fat milk. Everything else widely available.

Cook’s note: Remove the date stones completely before blending — even a fragment of stone can damage a blender. Soak the dates in warm milk for 10 minutes first if they are very firm, to ensure a completely smooth result.
