Sindhi Dhal Vada

Sindhi Dhal Vada is a deep-fried chana dal fritter that should not be confused with South Indian medu vada: different lentil, different spice, different texture and different logic. The chana dal is soaked, coarsely ground and seasoned with asafoetida, green chilli and coriander — a distinctly Sindhi aromatic profile — then shaped into flat rounds and fried until golden outside and dense and savoury within. It is sold at roadside stalls and made at home for tea, eaten with sweet tamarind chutney, and its primary pleasure is the contrast between the crunchy exterior and the lentil-dense interior that resists any easy comparison to anything else in the snack tradition.

INGREDIENTS 

METHOD 

  • Drain the soaked chana dal thoroughly. Blend coarsely in a food processor — the mixture should be a thick, rough paste with visible dal pieces, not a smooth purée. Add no water.
  • Transfer to a bowl. Mix in the asafoetida, cumin seeds, green chilli, coriander, salt and red chilli powder. The mixture should hold its shape when pressed.
  • Shape into flat rounds about 5cm diameter and 1cm thick, pressing firmly.
  • Heat oil to 170°C. Fry the vada in batches for 4–5 minutes, turning once, until deep golden all over. They should fry steadily, not aggressively, so the interior cooks through.
  • Drain on kitchen paper. Serve hot with sweet tamarind chutney and chai.

UK adaptation: Chana dal from any South Asian grocer. Asafoetida from any South Asian grocer. Everything else widely available.
US adaptation: Chana dal from Patel Brothers or H-Mart. Asafoetida from Indian grocery stores. Everything else widely available.
Cook’s note: The dal batter should be coarsely ground, not smooth — some texture in the fritter is correct. Over-blending produces a dense, rubbery result rather than a crunchy, lentil-textured one.
