Tawa Gosht

Tawa Gosht is flat-iron cooking at its most direct: meat placed on a large, searingly hot iron griddle with tallow rendered from fat-tail sheep, cooked with little more than onion, tomato and cumin, and served straight from the griddle with bread. The tallow is the point — it gives the meat a richness and slight gamey sweetness that vegetable oil and even ghee cannot approximate — and the asafoetida whispered through the masala is the Sindhi fingerprint on a technique that appears across Pakistan. It is dhaba food, highway food, the meal of long-distance drivers and travellers who stop at roadside kitchens along the National Highway through Sindh.

INGREDIENTS 

METHOD 

  • Heat a heavy cast-iron tawa or wide, thick-based pan over the highest heat until smoking.
  • Add the tallow or ghee. The moment it shimmers, add the asafoetida and cumin seeds — they should sizzle immediately.
  • Add the lamb pieces in a single layer and sear without moving for 2 minutes until charred at the edges. Toss and sear the other sides for 2 minutes.
  • Add the onions and fry on high heat, tossing with the meat, for 5 minutes.
  • Add the ginger and garlic pastes; cook 1 minute. Add the tomatoes, red chilli, coriander and salt. Cook on high heat, stirring constantly, until the tomatoes break down and the masala clings to the meat, 5–7 minutes.
  • Add the slit green chillies and a splash of water if the base is drying too fast. Cook on high for 3–4 more minutes until the meat is cooked through and the masala is dark and fragrant.
  • Scatter with ginger juliennes and coriander. Serve immediately with naan, chapati or koki.

NOTES

UK adaptation: Bone-in or boneless lamb shoulder or neck works well. Lamb tallow or rendered lamb fat from specialist butchers; ghee as a substitute that changes the character. Everything else widely available.
US adaptation: Lamb shoulder from halal butchers. Rendered lamb fat or ghee from specialty butchers or South Asian grocery stores. Everything else widely available.
Cook’s note: The tawa must be screaming hot before the meat goes on — the immediate sear is what keeps the juices sealed inside. Do not put meat onto a cold or warm pan.
